Apple Pie


I got in the creative mood yesterday and decided my husband could benefit from it. While he was hunting I made an apple pie for him since it is one of his favorites. He always ruins it with cheddar cheese though ugh! It took me forever to peel all those apples. Anyone got any shortcuts I could use next time? I got through it though. The recipe calls for lemon juice to go over the apples once they are all cut up, but I didn't have any so I used one of the limes in my fridge. It didn't change anything. I think it made it better. I usually make the pie crust by hand, but cheated and bought the crust. It was exactly the same as if I had made it myself which actually 'kinda' made me mad. All that hard work in the past for nothing. I worked really hard to make the perfect "homemade" crust when all the while any ol' Joe could just go buy it the same from the store. Hmmm reminds me of something else... something to do with our government... ANYWAYS, back to the subject. I just made the filling and put it in just as the recipe calls. Then I took the 2nd pie crust and cut it into long slices so I could weave it over the top. After all was said and done it turned out to be one of the best pies I've ever had. James ruined it with the cheddar though of course. I like mine with vanilla ice cream. Here is the recipe for the filling only. If you like the most traditional classic apple pie than this is the one!


6 cups peeled apples
1 Tbsp lemon juice
1.5 cup sugar
1.5 cup brown sugar
2 Tbsp all purpose flour
1.2 tsp ground nutmeg
2 Tbsp butter
1 egg yolk lightly beaten
2 tsp sugar
1/8 tsp ground cinnamon
two 9 in. pie crusts


Place one crust in 9 in. pie plate and set aside.
Combine apples and lemon juice in large bowl.
Combine 1.5 cups of sugar and next four ingredients mixing well.
Spoon sugar mixture over apples and toss gently.
(I was not gentle muahaha!)
Spoon filling evenly into pastry shell and dot with butter.
Roll remaining crust on top of pie, brush lightly with beaten yolk and sprinkle with cinnamon and sugar.
Place foil around edges of pie so they will not get roasted.
450 F for 15 min.
reduce heat to 350 F and cook for 50 for min.

Would you believe that is on my list of things to do in Oct? I don't think I have ever made an apple pie so I decided I would do that and watch the old Frankenstein (never seen it) sometime in Oct.

I am glad you posted the recipe! It will save me from looking for one to use!

Oh and don't knock the cheddar unless you've tried it. ;) It's delish!

I think you should put the pic. of you holding the pie on a flyer for house cleaning and pass it round' the neighborhood.
